I made a burger again tonight. It has more or less the same ingredients that I normally use - bacon, caramelized onions (two things I often skip if I don't have a lot of time), two 80/20 130g patties (instead of one large) and two types of cheese. The "brown sauce" is a half Hellmans and half Guinness sauce - mixed with smoky paprika, chipotle & granulated garlic powder. There are 5-6 other things added to the meat as well. All in all a very balanced flavour with a bit of bite but not too much. May not look too much different form my other pics ... but I'd say it's in the top 3 of what I've made.
I am just a little boy trapped in a mans body - I guess that's why I like to play with my food :))

Alright, so I've been really curious about meat substitutes. I've read "they're good", but how am I really gonna know if I don't try it out for myself, right? ;)
So I bought this "mince" that was based on peas. Then I did most of the things I normally do: added smoky paprika, chipotle, garlic powder, chili flakes, fish sauce & Worcestershire sauce to the patties as well as bacon, cheddar, caramelized onions, fresh tomatoes, homemade chili/garlic mayo and lettuce to the actual burger.
And so how was it?
Well, it was actually pretty damn good. Very tasty and pretty close to real meat. Yeah, so this "fake meat" is more mushy when you work with it - and a bit more crumbly when cooked. It also doesn't get the same kind of crust that real meat does.
I totally expected to not like the result - and I was pretty apprehensive before the first bite ... but I actually liked it. I jokingly said in my Instagram post that it might be because I'd used enough spices to mask if it was animal, plant or mineral based ... but I will totally make it again if a friend requests it. Personally it'll never replace real meat for me, but it wasn't bad and I'd call this a very succesful experiment.
I'm finally getting a take away curry from an Indian place here, after raging about curries to the wife for years she's finally like OK I'll get you a f*cking curry....
Curry tastes pretty good, portion size is quite small though, rice is basic white basmati with a few peas in it, Garlic naan feels and tastes like a frozen naan bread that's been slightly overcooked In the oven, paratha tastes like it's also a frozen one that's been microwaved. The samosas taste good, and the 2 sauces that come with them are delicious. The curry itself is a Lamb Vindaloo, there's little or no heat to it, and it's full of potatoes, these people are doing all the signs of cooking for clueless people. Aloo means potato, but the Vindaloo, is more about the sauce, and I've seen an actual Indian Chef say don't add potatoes just cos' of the "Aloo"...in the name. These people have done just that. The lamb meat in the curry is tasty, but not sure it was worth the money I just forked out for it.
Overall I feel like the take away I got this curry from is cutting corners because they can, because Americans don't know what a good Indian Takeout tastes, or feels like, so they can get away with not giving a good product, or at least not the best, and nobody will challenge them on it.
But you have a British Curry addict who can leave a shitty review on their page, and call them out about what they're doing, but I bet it'll get taken down before anybody reads it....
