I'd argue that the appended 's' is incorrect, it should just be "Ennis' Heptathlon", as you don't add another s after a possessive apostrophe if the thing it belongs to ends in an s.
Jennifer Ennis' Heptathlon seems to be the preferred spelling as far as I can tell (I could always chuck some extra sparklies over the apostrophe so you won't really notice it). ;)
And yes, I will be producing the whole inlay for you print & keep as an Olympic memento if ya like!

My name ends in an s, so I should know.
Ennis' is perfectly correct; and looks (and reads) neater.
There appears to be no concrete rule for names that end with 's'.
Both Ennis' and Ennis's are seemingly correct (I was told ages ago at school to avoid s's for names).
Some British English guides now say use Wayne Jones's but also use Wayne Bridges' - only because the name Bridges already has an "iz" sound to it.
