Actually, I've not played the Spectrum version of Lemmings, though I loved the Atari ST version, and the add-on pack Oh No! More Lemmings, but could never get to grips with Lemmings 2 - The Tribes.
By the way, did you know that in reality Lemmings don't commit mass suicide? Aparently it's just an urban myth. It was on Q.I., and Stephen Fry said that Lemmings don't throw themselves off cliffs with the intention of dying. They just do it to get away from approaching C64 owners, and they accept the risk of death as an acceptable price for avoiding the scummy C64 fans. Sounds reasonable to me.
Yes, but it's not about preference, it's just about if we like game x or not, and I bet you do like Manic Miner? As far as I can recall, I've never heard anyone say that they didn't like Miner Willy's first game.
I liked Knight Lore, and loved Sabre Wulf.
Lot's of people do, that's why I mention that I don't, as they don't fulfill Mile's criteria of games that everyone here likes, as even if everyone else likes them, I don't. Well, I don't dislike Knightlore so much, I just don't think much of it, but Sabre Wulf I detest, as it's not only (to me) so unenjoyable, but it's so far below the earlier but much better Atic Atac.
Just not Knightlore ('cos it's an over-rated graphics demo) or Sabre Wulf ('cos it's crap).

Wtf! Knightlore is incredibly playable and quite fresh,so much in fact it influenced a load of 3D isometrical imitations and wannabe`s.

Jetpac i found a bit boring, Atic Atac - meh, Bruce Lee a classic but so easy. Saboteur looks great and plays alright but wouldnt want to play it too much. Horace goes skiing gets dull

Mainly because it's a single screen affair.
I can only remember two single-screen games right now that I enjoyed, Tetris and that plumber game where you have to guide the water (and I guess Loopz on the Atari ST(and that one mainly because of the muzak)).
