It's possible to modify a Spectrum+ so that it has one composite video out and two audio outs WITHOUT adding transistors or other hardware, but simply soldering three copper cables in the right places.

The scart carries a composite video signal plus audio signals, so yes, it can be done. The modulator is entered by composite video, so you just need to bypass that one. I'm not sure if many VCRs have S-video output. VCRs have better parts than computers so composite video is not that bad from them. The main quality limitation will be your tapes.
