HEARTLAND has a beautiful graphic style - especially use of colour.
STARSTRIKE II had some of the most convincing moving 3D polygon stuff.
Steve Crow games like FIRELORD and STARQUAKE had some great sprites and backgrounds. -

Myth's were fantastic.
R-type's were as faithful as you could ever get on a humble Speccy.
Dan Dare 3 had a ridiculous amount of colour.
