Really you need to have a look with an oscilloscope otherwise you're basically reduced to guesswork.

In your cable haven't resistors(or have with low valor) in the R,G, B and sync signals. Put 330ohm resitors in 15, 11, 9 and 20 pin of the scart and you see them properly :)
