You may need to adjust the azimuth of the tape head with a small screwdriver. I used to do it by ear on my spectrum - just twiddle the adjustment screw untill you get the sharpest sound. I guess the zx81 is the same but I have no experience with it. -

Yes you have to remove the aluminium cover - there are two screws underneath it. Use a hairdryer to heat the glue so you don't bend the cover.
